Welcome to another chapter of this blog. I had hesitated to start this chapter till tonight when I got inspired while I was cooking, by the lemon (Citrus limon) essential oil sitting in front of me on the counter. The lemons used by DōTERRA come from Italy and my italian heart could not ignore the presence of this essential oil while I was doing what Italians are very good at: cooking!
I then decided to make a vegan soup blending asian flavors to mediterranean flavors.
Here below my first recipe, The Sun soup!
Ingredients for 8 servings:
-1 stalk of celery
-7oz. (160gr.) organic tofu
-1/2 bunch of green onions
-4oz. (100gr.) Baby Bella mushrooms
10 cups of water
-pinch of salt
-8oz. (225gr.) rice noodles
-3 drops of dōTERRA lemon essential oil.
-1 tsp of Turmeric.
Blend in onion, celery and carrot (soffritto). Put the mixture into a pot with hot extra virgin olive oil and stir. Add the water, the cut tofu,the green onions previously chopped, the mushrooms roughly chopped, salt and bring to a boil. Add the rice noodles. Let it cook for 6 minutes. Finally add the turmeric and dōTERRA lemon essential oil. Serve it hot. Enjoy it!
Hint: you can substitute the lemon essential oil with lime essential oil and the rice noodles with the Japanese noodles that somehow I prefer.
